The Quality Standard Mark Scheme

The Quality Standard Mark Scheme for beef and lamb provides one of the

highest levels of independently-inspected quality assurance for meat in the

United Kingdom.

The schemes standards contain combined guarantees of food safety, animal

welfare and care for the environment but with additional requirements

which also provide a guarantee of consistent and enhanced eating quality.

75g/3ozsun-dried tomatoes inoil,drained

andfinelychopped

25-50g/1-2ozgratedParmesancheese

150ml/¼pintextravirginoliveoil

25g/1oz freshbreadcrumbs

ToGarnish:

Method

PreheattheoventoGasmark4-5,180-190°C,350-375°F.

Topreparetheredpesto;placeallthe ingredientsexceptthe

breadcrumbs intoafoodprocessororblenderandwhizztogether

toformacoarsepaste.Transfertoasmallbowlandsetaside.

Placethe lambonachoppingboard;makeseveralslashesover

thesurfaceofthe lamb,seasonandspreadwiththeprepared

pesto.Transfertoafoil-linedmetalrack inaroastingtinandcook

accordingtoyourpreference.Halfwaythroughcookingcoverthe

lambwithfoil.

Transferthe lambtoawarmplate; lightlycoverwithfoiland leave

torestfor5-10minutes.

Sliceandservewithroastedorsautéednewpotatoes,any

remainingpan juicesandagreensalad.

10ml/2tsp rapeseedorsunfloweroil

Method

PreheattheoventoGasmark5,190°C,375°F.

Inasmallbowlmixtogetherthesteakrubmixandtheoil.

Placethe jointonachoppingboard,makeseveralslashes

overthesurfaceofthe joint,seasonandbrushwiththe

flavouredoilonbothsides.Transfertoaroastingrack ina

mediumnon-stickroastingtinandroastfor40-50minutes

(formedium).Coverwithfoil ifbrowningtooquickly.

Removethe jointfromtheoven,transfertoawarmplate,cover

and leavetorestfor5-10minutes,20 iftimeallows.

Slicetheroastandservewithmixedvegetablerice.
