1x400-450g (14oz-1lb) leanbeefmini roasting

joint (weusedamini topside roasting joint)

Saltand freshlymilledblackpepper

15-30ml/1-2tbsppreparedsteakspice rubmix

10ml/2tsp rapeseedorsunfloweroil

Method

PreheattheoventoGasmark5,190°C,375°F.

Inasmallbowlmixtogetherthesteakrubmixandtheoil.

Placethe jointonachoppingboard,makeseveralslashes

overthesurfaceofthe joint,seasonandbrushwiththe

flavouredoilonbothsides.Transfertoaroastingrack ina

mediumnon-stickroastingtinandroastfor40-50minutes

(formedium).Coverwithfoil ifbrowningtooquickly.

Removethe jointfromtheoven,transfertoawarmplate,cover

and leavetorestfor5-10minutes,20 iftimeallows.

Slicetheroastandservewithmixedvegetablerice.

4medium-sized topside ranchsteaks

For theMarinade:

90ml/6tbsp lightsoysauce

5cm/2inchpiece fresh rootginger,peeled

Method

Placeall themarinade ingredients intoa large

shallowbowl.

Add thesteaks,coverandmarinate in the

refrigerator for 20minutes,orovernight,

if timeallows.

Remove thesteaks from themarinadeand

cookaccording toyourpreferenceona

preparedbarbecueorapreheatedgrill.

Serve thesteakswithacouscoussalad.

RANCH STEAKS

lamb legsteaks

sauce

Method

Place thesteak inanon-metallicdish.Mix together the

marinade ingredientsandpourover thesteaks.

Coverandmarinate in the fridge for15-20minutes.

Cook thesteaksonapreparedbarbecueorpreheated

moderategrill for6-8minutesoneachside,oruntilanymeat

juicesrunclear. Transfer thesteaks toawarmplateand leave

torest fora fewminutes.

Servewitha freshcherryandbeansaladwithmixedbeans,

cherries,redonions,babyspinach leavesanda lightdressing.
